Thinly slice a cucumber the horizontal direction, if you have a Mandolin food slicer, this comes in handy for super thin slicing! Slice and cut veggies up into small portions. Pat cucumber dry with a paper towel, add veggies in a small clump and roll up cucumber around veggies. If serving these cuties “standing up” add a small tooth pick to the back side to hold veggie roll together.
