This yummy pot roast hit the spot! Love that this healthy meal is also whole 30 approved…we are now on Day 14 and feeling fabulous! Ready to finish out the last half of these 30 days strong. Have you noticed when traveling its not as easy to stay on track? We managed to make it through thanks to a little bit of planning ahead w/healthy snacks + pure will power! Saying no to the treats at this point was actually very easy.  Sharing the simple details of this perfect sunday meal today…see recipe below.

1   3 lb Beef Roast

season with garlic powder, salt & pepper, then sear both sides in a skillet

place in crock pot with a whole sliced onion on the top, cover and cook for 8 hrs.

This was so tender, we love how it literally falls apart.

Served with a side salad & roasted butter nut squash…to make season cubed butter nut squash with garlic, salt, pepper, parsley, then toss in olive oil.  Broil on high for 20 minutes or longer to make them extra crispy.
