This fresh and easy pico is so delicious! Lately we have been making it by the bowl full as my family can’t seem to get enough of it! They love it with a bag of tortilla chips, but I love it on my eggs, salads, steak or chicken…just about anything I eat. Today I sliced up a couple of plantains and made my own home made plantain chips fried in Olive oil, (just like my favorite plantain chips from trader joe’s) then ate them with this yummy pico adding in fresh peaches. It was heaven! I love eating Garden fresh tomatoes and fresh picked peaches every year. Ingredients:

3-5 medium garden fresh tomatoes

1/2 medium onion chopped

1 bunch of cilantro chopped

1 small serrano or jalapeno pepper (chopped use a little or a lot to make it spicier)

1/2 lime squeezed

1 tsp minced garlic (I use the minced garlic in a jar…best invention ever!)

Sea Salt 1 tsp,  or sometimes I add more depending on the taste

Cumin (2-3 shakes)

1 T Olive oil

1/3 C  chopped peaches (optional)

other optional ingredients we sometimes add chopped sweet red pepper, or diced cucumber.

Mix &  taste to check flavor, then let it marinate for at least 30 minutes before serving…
