Love eating healthy fats! Before Whole 30 I avoided anything with avocado because of the calories…not anymore. I have learned the importance of providing the right fuel to create energy, eating the right fats can provide that energy! My family and I are now benefitting as we eat avocados or guacamole as a nice garnish or topping every other day.
Recipe:
3 ripe avocados (smash with fork in bowl)
1-2 T chopped white or red onion
2 T chopped cilantro
1 Roma tomato chopped
2-3 tsp chopped sweet red pepper
1/2 tsp minced garlic
1/2 tsp lime or lemon juice
Optional 2-3 slices Jalapeno or Serrano pepper
Salt and pepper to taste
Mix and enjoy!
