These roasted sweet potato rounds with a little fresh guacamole on top were seriously so delicious! This yummy creation was actually my post work out meal, but they would make an amazing appetizer or a simple side to grilled chicken, pork, or steak! I had 1/2 of a sweet potato left over from shredding the other half earlier for breakfast + I saw that my avocados were ready so I whipped up my favorite guacamole. I then roasted some sweet potato rounds, once cooled I topped with the fresh guacamole and I was in heaven! See recipe details below…
Ingredients:
1 white or orange sweet potato (makes about 10 1/4″ rounds)
fresh guacomole
How to:
First I sliced up the white sweet potato into 1/4 inch rounds, seasoned them with garlic salt and olive oil & baked them for 20 minutes at 375. They will be crisp on both sides..add a spoonful of guacamole to each round & serve. So easy but seriously the best snack ever! I think I will add them as a side dish to my families next BBQ meal!
