Fall + soup season is now in full swing and we are loving it! Today I’m sharing a family favorite, Italian Sausage soup. Its super easy and healthy for you and your family, they won’t even know it’s whole30/paleo approved!
1 1/2 lbs fresh tomatoes, chopped
1 can tomato sauce, 15 oz
3 C chicken stock
1 yellow onion, diced
2 garlic cloves, minced
1 tsp salt
1 Tbsp basil
1/2 tsp oregano
1/2 tsp rosemary
1/2 tsp thyme
1/4 tsp fennel seed
1/4 tsp crushed red pepper flakes
8 Italian sausage links, cooked and sliced
1/2 a head of cauliflower chopped
1 small zucchini, chopped
2 kale leaves, stemmed and chopped
Directions: In slow cooker add chopped tomatoes, tomato sauce, chicken stock, onion, spices, cauliflower and sausage. Stir to combine and cook on low for at least 6 hours. Add zucchini and kale to slow cooker and stir to combine. Cook on high for 30 min.
