We LOVE making ordinary food fun and festive for a holiday…especially Halloween. This is one of my absolute favorite soup recipes, we pulled it out of the mom’s best archives to create this special Green Goblin-Eyed Stew just for you! We changed this version up just a little bit to make it clean and healthy so that it would be Whole 30 + Paleo approved. Gluten-free, dairy-free, soy-free, and it still tastes so amazing!
Ingredients:
5-7 small Zucchini’s chopped
1/2 medium onion chopped
1/2 tsp minced garlic
1 T coconut oil
2 Fresh Basil leaves chopped
1 cup Chicken broth
1/2-1 C coconut cream/milk depends on desired soup thickness
Salt and Pepper to taste
Goblin eyes: we used black olives with sweet red peppers, the soup is so thick they just float 🙂
Cook onion,zucchini with minced garlic in coconut oil till tender. Add 1/2 cup chicken broth
simmer for a few minutes. Pour mixture in blender and puree. Should be thick,Pour mixture back in pot add 1/2-1 C coconut cream/milk depending on desired thickness, you want it creamy and a little thick. Stir and let simmer for a few minutes, add salt and pepper. Serve by itself or as a side with your main dish. Garnish with the goblin eyes for Halloween, or some chopped basil. Enjoy!
