With the first snow falling, the season of cold and sick is now upon us and it has us all seeking warmth and comfort! Sharing a new twist on an old family favorite this soup is seriously so good! Instead of just plain old chicken soup,  we like to serve it over a spoonful of creamy mashed potatoes. YUM YUM! It will have your family coming back for more and more! We have made it super healthy too…Enjoy!

1-chicken-noodle-mashed-potato-soup

Ingredients:

Chicken Broth 6-8 cups (I like to make my own broth from cooking the chicken in all of my favorite seasonings like garlic salt and pepper, season all etc)
1 medium onion chopped
2-3 cups cooked chopped chicken
1 cup carrots chopped
1 cup celery chopped
seasonings; Salt and Pepper to taste, 1 tsp garlic powder
bring to boil and simmer for 10 minutes adding in
2 cups cooked wide egg noodles (omit if making whole 30/paleo)

bring to boil and simmer

cut and boil 5-8 potatoes
mash
add coconut cream and seasonings
salt and pepper to tase
1-3 T of butter or ghee

Serve Chicken Soup over mashed potatoes in a bowl. It’s seriously so good, adding comfort from the cold or when you are sick…ENJOY!
