We are so excited to share this yummy delicious treat! Even though we promote clean eating + whole cooking, there are always times in life where we still need to celebrate with a good treat or cupcake!  Kailee Fitch, a mama of two boys + owner of the blog Tried and Truly Delicious, is sharing this delicious treat with us today!  Moderation is always key so why not enjoy these strawberry shortcake cupcakes with cream cheese frosting! Yum!!  These would be absolutely perfect for your little ones valentine’s treat…okay and maybe just all year around!  We’ll let you be the judge of that so be sure to enjoy these treats with your family! xox

Angel Food Cupcakes with Strawberry Cream Cheese Frosting

1 box White Angel Food Cake Mix
1 ¼ cups water
muffin liners

1 stick of unsalted butter, softened
8 ounces of cream cheese, softened
4 cups of powdered sugar
2 teaspoons of vanilla extract
4 medium fresh strawberries, grinded in a food processor
1 teaspoon fresh lemon zest
1 carton of strawberries for décor



Preheat oven to 375 degrees. Place cupcake liners in regular size muffin cups. In a large
bowl combine cake mix and water with an electric mixer. Beat for only about 1 minute until
light and fluffy. Pour batter into muffin tins filling ¾ full. Bake 12-18 minutes or until
golden brown. When done remove cupcakes to cool on a rack.

In a large bowl beat butter and cream cheese together with an electric mixer. Add the
powdered sugar gradually with a cup at a time until smooth and creamy. Beat in vanilla,
strawberries and lemon zest.

Rinse and slice strawberries long ways four times. Place on top of cupcake and sift
powdered sugar lightly on top.
