We’re getting ready to share our unicorn inspired party, but before we do, we wanted to share exactly how to make these unicorn cookies! If you are having any themed party, just grab a cookie cutter for that theme and follow these steps! We promise they are easy! It just requires a few steps, but so worth it! Here’s how to make these yummy treats for any party!

Supplies:

Horse Cookie Cutter (read the directions on how to turn this into a unicorn!)

As you can see I like to make my cookie “thick” this way they wont break as easily when you pick them up to frost them. I did not to have a “unicorn head cookie cutter” So I improvised a little!  I took a horse cookie cutter and cut out and added a triangle to complete the look. I pressed the triangle into the horse head and baked it. So happy with the way they turned out!

To Frost….First, outline your cookies, use the same frosting listed below, just add more powdered sugar to thicken it up, make sure its nice and stiff, meaning it will hold its shape!

Second….Now fill these bad boys, this is the thin “flooding frosting” (see recipe below). just use a piping bag with the end cut small, now just fill in around the outline, the frosting will “run together” this is good, this will fill in all the nooks. If you have any bubbles, use a tooth pick and pop them! Let your frosting dry.

Now fill in with the details, I’m going to be honest, I cheat a bit, sometimes if I need black (which is a hard color to mix, it always looks brown) I just buy the store bought and put a cake tip on the end of store bought tube, it works like a dream!

Sugar cookie recipe:

1 Cup butter, softened
1 Cup granulated white sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 egg
2 teaspoons baking powder
3 cups all purpose flour

Bake 350 for 8 minutes! Recipe adapted from here, click here for the rest of the directions. Ps. I like a thick cookie so I made sure not to roll my cookies “too thin” see photo above.

Icing Frosting:

1/4 cup meringue powder
1 cup cold water (NOT hot)
2-4 cups powdered sugar
1 tsp vanilla extract

Mix these all together, just watch the consistency, if your needing thicker frosting for piping then add powdered sugar. If you need thinner, add water, just a couple drops goes a long ways.
