We are excited to kick off  our SUMMER grilling series today, Hi I’m Natalie, here from @thelittlecoconutty.  This is the absolute perfect thing to make this Father’s day weekend! Its whole 30 + kid friendly approved!  Today I’m giving a deconstructed version of this to my toddler since it’s hard to hold, or sometime I will put it in some whole wheat pita bread.  See the recipe below ….

Go ahead and make these easy lettuce wraps, they are perfect for summer BBQ season! ENJOY and Happy Father’s day to all the Dad’s out there!  XO

Enjoy & Happy Grilling!

Serves 4
4 chicken breasts
2 avocados
2 mangos
1 head of green leaf lettuce
1 red onion

GARLIC PALEO MAYO
1 egg
1 clove garlic
1/2 tsp salt
1/2 tsp apple cider vinegar
3/4 c avocado oil
1/2 tsp mustard
Juice from half a lemon

DIRECTIONS: First prepare you wrap ingredients by washing the lettuce, chopping up the onion and avocados and mangos.

Next make your garlic paleo mayo. Simply crack the egg in a wide open mouth jar that will fit an immersion or stick blender inside, add avocado oil, garlic, salt, vinegar, mustard and lemon juice and place stick blender to the bottom of jar and blend. Do not pull the stick blender to the top until the mayo starts thickening.

Season chicken breasts to your liking, I used a simple adobo seasoning and then threw it on the grill with sliced up mango. Once chicken is done assemble lettuce wrap.
