When it’s a million degrees outside, the last thing you want to do is spend an hour in front of a hot stove. But you’re still hungry. Enter this easy, filling, healthy delicious twist on a classic pasta salad. It’s perfect for a quick lunch, pairing with grilled meat for dinner, or even make a double batch and bring it to a family BBQ or picnic.  Recipe below….

Pasta Salad:

1 cucumber, spiral cut or sliced thinly
1 cup broccoli, cut into florets
½ tomato, diced
½ cup olives, sliced
1 avocado, diced
¼ red onion, diced
½ cup halved pepperoni
1 cup cooked cubed chicken or ham (optional)

Italian dressing:
¾ cup olive oil
¼ cup apple cider vinegar
2 tbsp water
1 tsp minced garlic
2 tsp coconut sugar
1 tsp salt
½ tsp pepper
1 tsp Italian seasoning
2 tbsp parmesan cheese (optional)

Directions:

1. Dressing: Mix all ingredients together. If possible, allow flavors to blend for at least an hour up to 24 hours.

2. Salad: Assemble all ingredients in a large bowl, serve with as much Italian dressing as desired.
