This Lemon and Garlic Roasted Artichoke is the perfect side dish for any BBQ! Hey all, it’s Brook here from @bitsofbb again sharing a super easy side dish..that’s both delicious and Whole30 compliant!
As a family we try to choose one new vegetable each month and we eat it once a week, prepared in different ways, this way my kids can help me understand what they like, don’t like, or really LOVE! This month my Kiddos chose artichoke as our “spotlight veggie”! This recipe for Lemon and Garlic Roasted Artichoke is the family favorite and can be perfectly paired with your favorite grilled chicken or shrimp!
Ingredients:
Artichokes (we use 3 for our family of four)
3 TBS Olive or Avocado oil
1 large Lemon (zest and juice)
2 TBS of garlic (minced)
Salt and pepper
Sides: mixed salad greens, almonds (chopped), protein like grilled chicken or shrimp!
Directions
Preheat oven to 390°F.
In a small bowl mix your oil, lemon zest, the juice of half the lemon, and the garlic. This will be your marinade, set aside.
Wash the outside of the artichokes, a great task for kids! If your child is old enough to use safety scissors have him/her help you cut the “pointy” part of the artichoke leaves off the outside.
Remove any small leaves at the base near the stem. With a sharp knife remove the tip of the artichoke and a small portion of the stem. Now very carefully cut the artichoke in half.
Remove the “fluffy” pit with a paring knife.
Lay the artichokes cut side up on a foil lined baking sheet and drizzle with the marinade.
Any remaining marinade pour into the hole of the artichoke.
Roast in the oven for 30-40 minutes or until golden brown and tender!
Serve with preferred sides!
This recipe is pretty garlicky, that’s how we like it but feel free to use less garlic if you prefer!
We actually enjoy this mainly as a lunch or a snack on its own. Sometimes I like to whip it up during nap time so momma can have it all to herself, shhh, don’t tell!
