The only thing better than homemade salsa in my opinion…would be this mesquite smoked salsa fire roasted on your ! Oh my goodness this salsa topped any salsa we have ever made…and we are a salsa n’ chips loving family that eats a lot of chips and salsa! We introduce salsa early, literally from the time each one of our kids starts eating solid foods. 🙂

Prep for the grill/smoker…
2-3 Roma tomatoes cut in half
1/2 of a medium sized onion
1-2 jalapeños depending on how spicy you like your salsa…the first time I did two and they must have been spicy ones cause that was a little too much…so next time I will try 1 and go up from there.
Place on your … Smoke it for about 20 minutes then turn up the heat to 300 degreess and grill for 5 minutes. ( we used a mix of mesquite and apple wood pellets)
Once grilled place in fridge for a few minutes to cool them down…after they are cooled
then place all grilled items in blender
add…
1 bunch of Cilantro…
3-4 teaspoons of minced garlic
1 can of stewed chopped tomatoes (our favorite one is the western family petite diced with sweet onion)
juice of 1/2 lime
2 tsp Honey (optional)
1-2 teaspoons of CUMIN or 4-5 good shakes
a pinch or two or rock sea salt
then pulse a few times till the desired consistency…we like ours chunky…
Serve with your favorite tortilla chips and ENJOY!
