Today we’re excited to have Pure Fit Pure Food share this yummy healthy recipe as part of our summer grilling series.   Summer can get crazy busy, running around from sports, vacations, family BBQ’s, and everything in between!  This recipe is simple and only takes about 10 minutes prep the night before.  Marinate it overnight and your easy BBQ dinner is ready to go!  You will definitely want to check out the ladies at Pure Fit Pure Food,  they have so many delicious recipes + workouts to help you stay on track this summer!  Happy healthy summer eating!  xo


Lime Coconut Chicken with Grilled Stone Fruit: Serves 4-8
4 large chicken breasts
4 limes
1 can full-fat coconut milk
1 tsp garlic powder
2 tsp sea salt
2 peaches
1 nectarine
4 plums
Coconut oil spray

Combine all ingredients in a plastic baggie or glass bowl and marinate overnight. When ready, grill 10 minutes each side. For the last five minutes, toss sliced fruit in coconut oil spray and grill 2 minutes each side.
