Hi, Brook here from @BitsofBB, today I’m sharing the perfect snack for your busy summer on the go! Who is enjoying some fun summer adventures?  We have been taking full advantage of the warmer weather with splash pads, park visits, zoo trips, mountain hikes and vacations!

The busier we get the more I appreciate snacks that are delicious, filling, and give my kids and I an extra boost of energy!
This recipe for Coconut and Cranberry Chip Energy Bites has become a summer staple! It’s delicious (which makes the kiddos happy!) and filled with things like chia, hemp, buckwheat, pumpkin seeds, and pistachios (which makes mommas happy)! Bonus, there is no cooking involved and you can make extra to freeze, for when you need to grab and go!

Coconut and Cranberry Chip Energy Bites:
Makes 24 one inch balls

Ingredients:
1 1/2 C dry old fashioned oats
1/3 C unsweetened coconut flakes
1 C of almond butter
1/2 C total of chia seeds, hemp hearts, and buckwheat! (Or any other blend you like!)
1/3 C of mini chocolate chips, we use the Enjoy Life brand, it’s dairy free!
1/3 C of honey
1/3 C of pumpkin seeds
1/4 C of dried cranberries
1/4 C of crushed pistachios (or any other nut)
1 tsp of vanilla
A dash of cinnamon (optional)

Directions:
Place all of the ingredients into a stand up mixer and mix well!
The “dough” should form into a well mixed lump that isn’t sticky.
Roll into one inch balls and refrigerate for an hour. Enjoy!
Store in the fridge for one week or in the freezer for a month!
