Gluten free/dairy free banana bread! Finally a banana bread that is completely clean and wholesome & its so delicious! Hi everyone, Brook here from @bitsofbb, I was able to make this bread with entirely Whole30 compliant ingredients!!
Don’t get me wrong, by no means is this a Whole30 recipe, it’s as SWYPO as it can be, but I love a recipe that is so clean, so whole, that I can feel confident slicing off a piece for my kids alongside breakfast! It’s moist, dense, and so good you will be begging your bananas to turn brown, I promise!
Ingredients:
Coconut oil to grease the pan
4 medium bananas, the more over ripe the better
4 large eggs
1/4 C of unsweetened applesauce
1/2 C Nut Butter (Sunflower seed butter works too so it can be #nutfree!)
1/2 C coconut flour
1 tsp of baking soda
1 tsp of baking powder
A good pinch of fine-grain sea salt
1 tsp of cinnamon (optional)
3 TBS of Criobru for a chocolate flavor! (optional) but is chocolate ever really optional!?
Additional optional add ins:
1 Tsp of Vanilla extract
1/2 C of Enjoy Life mini Chocolate chips
Or 1/2 C of chopped nuts
Directions:
Preheat oven to 350 degrees.
Grease a bread loaf pan and line with parchment paper if desired.
Combine bananas, eggs, applesauce, and nut butter into a blender or food processor and blend well.
In a separate bowl mix the coconut flour, baking powder and soda, salt, cinnamon, and Criobru.
Mix the dry ingredients with the wet, blend well to combine.
Pour the batter into a prepared pan and spread it out evenly!
Place in the oven and bake for about 45 minutes or until a toothpick inserted into the center of the loaf comes out clean!
Remove from oven and allow to cool in pan for 15 minutes and on a wire rack for 10 minutes before serving!
The most recent loaf I made (pictured) I even added the Crio Bru onto the top of the loaf prior to baking and it gave the top a nice little chocolatey crunch!
