This soup will seriously be one of the best you will ever eat!  My family absolutely loved it…at first they weren’t sure about the leeks, but it turned out amazing! Full of healthy goodness and it can be made dairy free if needed.

Creamy potato leek soup

RECIPE:  Serves 5

6 medium potatoes peeled and cubed

6-8 cups of chicken broth

1/2 medium onion chopped

1 large leek sliced and chopped

1 tsp minced garlic

1-2 cups half and half [to make dairy-free use coconut milk]

1/2 teaspoon of salt

1/4 teaspoon of pepper

bring potatoes to boil in chicken broth, cook until tender and set aside, do not drain

In another saucepan…saute onions and leeks in 2-3 tsp avocado oil

Put in blender half the potato and chicken broth mixture add in 1/2 the sauteed onion + leeks, add about 1 cup of the half and half or coconut milk then
blend until smooth then pour into a pot.

…then take the rest of the potato + onion + leek mixture and pulse leaving it a little chunky, then add it to the other mixture in your pot. Stir them all together add in more half and half or coconut milk as needed then salt and pepper to taste. Let it cook now for about 5 minutes on medium heat. Then it’s ready to serve
